Ah summer, what a time to be alive. And working a 9 a.m. to 5 p.m. internship (or in my case, 6 a.m. to 3:30 p.m.). For many college students, summer internships involve moving away from home and getting a taste for life without your parents. What most find hard is this whole cooking thing. Long past are the days of mom having food ready for you, or unlimited food at your college dining hall. And I highly doubt you're making enough to eat out nightly. So here I am, for your pleasure, to give you a few easy recipes to help you make it through the months to come.
Breakfast
1. Mini Muffin Pancakes — make in bulk and eat them for the entire week
2. Breakfast Muffins — another good bulk recipe
3. Avocado and Egg in a Hole — for something a little healthier and a lot more hipster
4. Bacon and Egg Crescent Squares — add a crescent roll and who isn't sold?
5. Easy Cinnamon Sticks — just like your childhood!
Lunch
1. Cheesy Pizza Sticks — little portable pizza (rolls)
2. Summer Vegetable Pasta Salad — for the healthier side of you
3. Homemade Ham and Cheese Pockets — ham and cheese, classic
4. Chicken Enchilada Roll-ups — great for parties!
5. Chicken Parm Wrap — anything "wrap" is good lunch pickings
Dinner
1. One Pan Chicken and Veggies — "one pan" will be your best friend
2. Chili Mac — a comfort food to the max
3. Chicken Broccoli Alfredo — basically like eating out
4. Baked Garlic Butter Chicken — Butter (how very good for you)
5. Easy Stromboli — save some delivery charges with this one
I want you to use these recipes. Prove to your friends and family that you can indeed survive on your own!! And hey, picking up some cooking skills isn't the worst thing in the world.
