Squash is an amazing winter vegetable. I love squash and could eat it every week! Since fall is around the corner and the weather is starting to get chilly, I thought I'd share some squash for you to enjoy while you cuddle up in blankets and watch "It's The Great Pumpkin Charlie Brown" for the second time this week.
1. Acorn
This squash is loaded with fiber. If you halve and roast it, acorn squash can be used as a bowl for other delicious food. This is my personal favorite. I like to cut it in half, scrap the middle flesh and seeds, slap some butter and brown sugar in the middle, and bake in the oven until the flesh is soft. YUM!
2. Butternut
This squash is the most common. The flesh is dense, sweet, and nutty. A butternut squash has the highest dose of vitamins A and C.
3. Pumpkin
Believe it or not, but a pumpkin is in the squash family! Most people use them to create jack o' lanterns, but pumpkins are the best for cooking. They also have the perfect flesh for fall baking (pumpkin flavored everything)!
4. Spaghetti
This squash contains a stringy flesh, and is mostly cooked and used instead of noodles in a make shift pasta dish. It is usually paired with a red tomato sauce, or butter and herbs.
If you want an extra treat, roast the seeds in the squash, in the oven! They can be seasoned with salt and pepper, Lawry's Seasoned Salt, cinnamon and sugar, or any of your favorite seasonings.
