6 Easy Ways To Use Rotisserie Chicken

Making dinner every night can be a huge hassle, but supermarkets make it easy with rotisserie chickens! -Of course, just chicken and rice can get boring pretty quick! Here are 6 easy, fast, and healthy ways to spice up your average rotisserie chicken!

1. Italian Chicken Salad

Pull apart 1 whole rotisserie chicken, and place in a large bowl. Add ½ sliced orange bell pepper, ½ thinly sliced red onion, ¼ cup roughly chopped parsley, 2 tablespoons of capers and shaved Parmesan cheese to the bowl. Toast sliced almonds to your liking before adding them to the bowl. Before tossing your chicken salad, combine ¾ cup of olive oil, ¼ cup of red wine vinegar, juice of 1 lemon, and salt and pepper to taste. Voila! You’ve got a light and delicious dinner that is killer between bread for tomorrow’s lunch.

2. Chicken and Quinoa

Pull apart 1 whole rotisserie chicken, then cook 1 serving of quinoa. Mix the cooked quinoa, chicken, and your favorite veggie with a ginger dressing for a protein packed snack that will last all week.

3. Italian Chicken Soup

Pull apart 1 whole rotisserie chicken, and add it to a crock-pot filled with two cartons of chicken stock. (I also add the chicken drippings from the rotisserie pan.) Add small chopped carrot, celery, ½ cup of grated Parmesan cheese, 2 whisked eggs, and 2 cups of cooked orzo before turning your crock-pot on high. Cook until the carrots are fork tender, add ¼ cup of parsley, stir, and serve. Leftovers are a must on this dish.

4.Chicken Tacos

Pull apart 1 whole rotisserie chicken, and mix in a bowl with 1 cup of your favorite salsa. Let the chicken marinate while heating up tortillas. Place a generous amount of chicken on the tortilla with Mexican mix cheese, guacamole, Pico de Gallo, cilantro, sour cream, and lime. Also try chicken nachos!

5.Chicken Pesto Sandwich

Pile rotisserie chicken high topped with mozzarella, pesto, fresh sliced tomatoes, and drizzle of balsamic glaze. Serve open faced with a basil garnish if desired, but don’t forget to toast the buns!

6. Buffalo Chicken Dip

Pull apart 1 whole rotisserie chicken, and mix generously with your favorite buffalo sauce, bleu cheese, mozzarella, and salt and pepper to taste. Pour the mixture into a crock-pot set to low and enjoy with crunchy chips and a good “chick” flick.
