Summer is in full swing and most of us take the opportunity to enjoy the weather, start up new activities and go out with friends. If you’re still in school, you (hopefully) don’t have the burden of classes, which means afternoons are free from doing homework or studying. If you’re already adulting (I’m sorry), then you may take your family to eat out as a treat. We usually see eating out as something easy and quick to do, but the time to make a homemade, delicious meal with friends or family is much more satisfying than being restricted to sitting in a restaurant or a dollar menu burger. Here’s 5 Pinterest-inspired recipes to spice up your dinner plans:
1. Grilled Chili Lime Chicken Fajita Salad
To make this savory dish, you’re going to need these ingredients and steps.
Create a marinade of 3 tablespoons of olive oil, a little over ½ cup of lime juice, ¾ a cup of crushed red pepper, 2 tablespoons of chopped cilantro, 2 cloves of crushed garlic, a teaspoon of salt and ½ teaspoon of ground cumin. Take half of this mix and save it for your dressing. Add 4 chicken thigh fillets to the other half and marinate this for however long you would like.
Once the chicken is marinated, cook the chicken until both sides are golden. Add ½ cup of yellow pepper, red pepper and onion to the pan until cooked.
For the salad portion, you’ll need 2 sliced avocados and 5 cups of Romaine. Cut the chicken into slices and add the remaining ingredients together. Top with the leftover marinade! You can add shredded cheese or sour cream at the end if you would like.
2. Indian Quinoa and Chickpea Stir Fry
No meat for this dish but that doesn’t mean it won’t be jam packed with protein and flavor!
Start with 3 tablespoons of olive oil in a large pan (or wok) and add in 2 teaspoons of chili powder, garam masala, cumin and red curry powder, 1 ½ teaspoons of smoked paprika, a bit of black pepper and ¼ teaspoon of crushed red pepper.
Cut up 1 onion of your choice, 1 red pepper, a 1 inch cube of ginger, and 3 cloves of garlic. Add the onion to the pan first, following with the rest of the cut up ingredients.
Have prepared 4 cups of cooked quinoa to add to the mix, along with 3 cups of chickpeas and 1 can of diced tomatoes. Add spinach, how ever many cups you desire, with ½ a teaspoon of salt. For heat and spice lovers, add 1 sliced red or green chile.
3. Chicken Pad Thai
Head over to your local Asian market for some of these ingredients to make some bomb pad thai.
Start with prepping with 1 pound of sliced chicken, mixing it with 2 tablespoons of tamari and 1 tablespoon of cornstarch in a bowl. Grab another bowl and add 1 tablespoon of water, oil and tamarind paste, with a ¼ cup of fish sauce, 2 tablespoons of tamari, 3 tablespoons of lime juice, 1 teaspoon of sambal oelek and a ⅓ cup of chicken broth and brown sugar. Stir until liquified.
Bowl 12 ounces of rice noodles, choosing any kind you like.
Take 1 tablespoon of oil and add it to a large pan or wok. Add 5 minced garlic cloved with the chicken until cooked through. Remove the chicken and add 1 bunch of sliced scallions (only the light portions) with 1 cup of carrots, 1 tablespoon of oil, and 3 pre-beaten eggs. Add the chicken, noodles, 1 cup of bean sprouts and sauce once the eggs are scrambled. Have ready a mix of 1 tablespoon of cornstarch and water to mix in. Toss everything up and serve with ½ a cup of cilantro and ⅓ cup of chopped roasted peanuts. Grab some chopsticks and twirl into goodness.
4. Mexican Corn Salad
Better than Chipotle and easy to make, get ready for some tasty stuff. Here is the recipe.
Unthaw a bag of frozen corn (16 oz) or grab 4 cans of corn. Put the corn into a large bowl. Drizzle 2 tablespoons of olive oil with some salt and pepper, 3 tablespoons of mayonnaise, 4 ounces of crumbled cotija cheese, a ½ teaspoon of chili powder and 2 tablespoons of lime juice.
Cut up 1 tablespoon of jalapeno peppers, a â…“ cup of cilantro, 2 cloves of garlic, and 2 tablespoons of red onion.
Throw all the ingredients in together and give it a good mix. Feel free to add 1 to 2 cans of black beans, straining the water. Serve with another dish and you are set for a fiesta.
5. Chili Lime Shrimp Tacos
Last, but definitely not least, a tangy twist to your typical hand-held favorite.
For this recipe, grab 24 peeled raw shrimp and toss together with 1 tablespoon of olive oil, 1 zested lime, 3 minced garlic cloves, a ¼ teaspoon of paprika, crushed red pepper, salt and chili powder. Let this all sit to marinate.
Take 4 cups of shredded cabbage and combine with ½ a tablespoon of minced jalapeno, a bit of salt and the juice from the lime.
Put corn or flour tortillas on a pan to warm them up. Make sure they are small and you have plenty.
Cook the shrimp all the way through. Once finished, line your tortillas up and fill with the cabbage mix, cooked shrimp, your choice of salsa, and 1 cup of sliced avocado. Add more avocado if you love that green goodness.
