As a Louisiana native, I'm no stranger to good food. Cajun cooking is some of the best food I've ever tasted, and living in Alabama while I attend college makes me miss the great Louisiana home cooking that I'm used to. So this weekend, I took a trip to New Orleans to cure some home sickness. Specifically, to fill my stomach with good food. My favorite place to eat when I visit is, of course, Cafe du Monde. The open air cafe has been a New Orleans staple since 1862 and I've enjoyed their beignets and cafe au laits ever since I can remember. So for those of you who have never had beignets, here's some reasons why I believe they are the best pastry on the planet.

1. All the fried dough and powdered sugar goodness that you'd experience with a funnel cake, but a thousand times better.

Not only are beignets served with powdered sugar piled high on top of them, they're an experience to eat. They're always served fresh and hot and melt in your mouth when you take a bite. Also there isn't a clean way to eat them. No matter how careful you are, you'll always end up covered in powdered sugar and it's always entertaining to watch people struggle to stay clean.

2. You can eat beignets with basically everything.

Fried dough squares have never been more versatile. Beignets can be served stuffed with fruit, with ice cream on the side, covered in chocolate, or even dipped in coffee. The possibilities are endless, and the only limitation is your imagination.

3. They have a rich history.

Beignets were brought to Louisiana by the Acadians, who originally lived on the eastern coast of Canada, but after a forced migration by the British many moved south to Louisiana and began to share their culture with the people living there. The word "beignet" is french for 'fritter' and as it became more popular in Louisiana, it was eventually named our official state donut! Thank you Acadians.

4. They're quick and easy to make!

Since beignets are basically just fried dough with powdered sugar, they're a quick dessert and can be shared easily with friends and family. If cooked correctly, the outer layer of the beignet is nice and crispy while the inside remains soft and doughy. It's a perfect combination of sugar and carbs.

5. You can eat them whenever!

Breakfast, lunch, or dinner they can be just the thing to satisfy your sweet tooth and end a meal with a delicious dessert that will remind you of home and make you smile.

Today I started my third week of college at Minnesota State Moorhead. I have survived welcome week, finding my classes on the first day, and being an awkward loner in the dining hall. Even though I have yet to be here for a month, I have already experienced many thoughts and problems that only a new college student can relate to.

"Make sure to get involved when you're in college!"

We've all heard some variation of this phrase, whether it came from parents, other family members, friends, RAs, or college-related articles. And, like many clichés, it's true for the most part. Getting involved during your college years can help you make friends, build your resume, and feel connected to your campus. However, these commitments can get stressful if you're dealing with personal issues, need to work, or aren't sure how to balance classes and everything else going on during the semester.

In college, one of the essential things to have is friends. Yes, textbooks, a laptop, and other school supplies are important but friends are essential. Friends are that support system everybody needs. The more friends you have the better the support system you have. But you also have someone to share experiences with. And don’t settle for just one or two friends because 8 out of 10 times they are busy and you are studying all alone. Or they have other friend groups that do not include you. Don’t settle for just one or two friends; make as many friends as you can. After the first couple of weeks of college, most friend groups are set and you may be without friends.

Finals week is upon us. It is a magical time of year during which college students everywhere flock to the library in attempt to learn a semester's worth of knowledge in only a week. For some students, it's their first time in the library all semester, maybe ever. Others have slaved away many nights under the fluorescent lights, and are slightly annoyed to find their study space being invaded by amateurs. While these newbies wander aimlessly around the first floor, hopelessly trying to find a table, the OGs of the library are already on the third floor long tables deep into their studies.
