Being a college student, and living on my own, has helped me become more creative in the kitchen. Sometimes it's hard to find a balance between cooking yourself healthy meals and settling for a bowl of Ramen or Easy Mac. I thought I would share with you some easy recipes that I found on Pinterest that I really enjoy. I highly recommend you try them.
1. Cheesy pesto and tomato pasta:
This meal consists of 9 ingredients, including:
- 1 1/2 cup basil leaves,
- 1 garlic clove,
- 1 tomato,
- bowtie pasta,
- 1/8 tsp pepper,
- 5 tsp olive oil,
- 3 1/2 tbsp butter,
- 1/2 cup mozzarella,
- 1 cup whipping cream.
If you are a pasta lover, this is the perfect meal for you.
2. "Holy Yum" Chicken:
This is not only a delicious 7 ingredient choice for dinner, but it is also cheap and easy to make! It consists of:
- 1 chicken thigh or breast
- 2 tsp rosemary
- 1/2 cup Dijon mustard
- 1/4 cup pure maple syrup
- 1/4 tsp ground black pepper
- 1 tbsp Cornstarch
- 1 tbsp rice wine vinegar
If your looking to add more protein into your life, this recipe is the perfect way to do it!
3. Grilled cheese tomato, cheese, and pesto sandwich:
This is a perfect meal for lunch or a quick dinner. All you need is the ingredients shown above, which are:
- Olive oil
- pesto
- wheat bread
- tomato
- mozzarella cheese
4. Broccoli Cheese Soup:
This 5 ingredient soup is a must have, and tastes better than any canned soup (in my opinion). All you need is:
- 2 cups of broccoli
- 1/2 onion chopped
- 4 cups chicken stock
- 1 15 oz can of evaporated milk
- 2 cups of sharp cheddar cheese
It also still tastes great the next day if you have leftovers!
5. Breakfast casserole muffins:
If you are a breakfast person like myself, these breakfast muffins will definitely change your life. Not to mention they are very easy to make. All you need is:
- 3 slices of ham
- 1 dried parsley
- 8 eggs
- 2 tsp ground mustard
- 3 pieces whole wheat bread
- 1 cup cheddar cheese
- 1 cup cheddar cheese
- 1 cup of milk
I like making this since I usually have most of these ingredients on hand in my kitchen.
