4 Tips For Grilled Desserts

When you and your friends decide to hang out and grill, the first foods that typically come to mind are savory: hot dogs, hamburgers, potato salad, steak, etc. And after you and your friends grill up those delicious foods and yourselves a great time, the only thing missing is dessert. Every good meal needs to be concluded by a satisfying dessert, whether it is light or rich. A well executed dessert is the perfect way to show off your skills to your friends and secure your dominance over the grill. So here’s four tips for great deserts using the grill.

Tip 1: Grilled Fruits

Pretty basic and simple. There are a lot of options for you to choose from: watermelons, pineapples, peaches, apples, pears, you can even grill grapes. It can be hard to narrow down, so my opinion, choose fruits that don’t melt or cook down quickly when heated. Also try picking fruits that are bright in flavors and in season, or at least have summery vibes.

Peaches and pineapples are great because they retain texture after being grilled. This peaches recipe is attributed to my cousin Ryan and our friend Kendrick. With the yellow peaches—they have to be yellow, by the way—sprinkle some cinnamon and nutmeg over the top of the peaches. You don’t need to add sugar because the peaches have natural sugars in them. Leave the skin on and place them on the grill, skin side up. They should only be on there for a couple of minutes, but you can check hard cooked you want them by just touching it and feel for it. Serve with scoops of vanilla ice cream and there you have it, easy simple dessert.

For the pineapple, I like to be a little more fancy: Vanilla ice cream on grilled pineapple with rum sauce. Shave off the skin and core the pineapple, cut into one half or one fourth inch slices. Throw them on the grill until they change color to be more golden and have grill marks. Put the finished pineapple on a plate and start working on the sauce. Grab a sauce pan and pour in four shots of a nice golden rum. If you want to experiment with flavors, try a spiced rum. Put two tablespoons of brown sugar, a teaspoon of salt, and a drizzle of maple syrup. Cook down the sugar until you have a similar consistency to a loose caramel. Place a slice of grilled pineapple onto a plate, a scoop of vanilla ice cream, and drizzle the rum sauce over the top. Perfection, simple, and it looks and feels fancy.

Or something simple with strawberries might be the way to go. Take a pound cake cut into one and a half inch cubes and dip in condensed milk. Place the cake, along with whole strawberries onto skewers and grill. Serve with whip cream and enjoy!

Tip 2: Grilled Doughnuts

Doughnuts just got better. Having already been fried, grilling doughnuts will impart smoky flavor to this dessert. Slice a glazed doughnut in half, drizzle the exposed sides with honey and sprinkle brown sugar, and place both halves onto the grill, glazed sides up. Flip sides and work on the crème fresh. Pull a couple of sprigs of fresh mint and slice them up. Zest an orange and fold in the orange zest and the mint into a bowl of crème fresh. Peel and cut up some fresh orange slices. Serve the doughnut with a spoon of the crème fresh and top with the orange slices. Simple and refreshing.

Tip 3: Captain PB&M

Some people like the simple things and enjoy a sandwich. A dessert sandwich. Just take two slices of thick cut or medium cut buttermilk bread or potato bread or white bread if you’re boring, and spread butter on the sides that you’re going to be putting on the grill. On the opposite sides, spread chunky peanut butter and marshmallow fluff on. Bury some Captain Crunch cereal into the peanut butter and fluff. Slice up some bananas and put them on there. Put the two halves together and grill.

Tip 4: Captain Banana Crunch Dog

This is how you really impress your friends. Take a normal four-pack King’s Hawaiian Rolls, and rip off two, but keep those two intact and connected. Now slice it like a hot dog bun and toast it on the grill. Fold in some coconut shavings into mascarpone cheese or cream cheese. Spread the inside of the buns with the mascarpone cheese, or cream cheese. The hot dog wiener is easy. It’s a fried banana. Coat a banana in flour, sugar and nutmeg, fry, and you have yourself your wiener. Grill a few slices of mango and lay them next to the banana. Top with Captain Crunch, toasted peanuts, and a drizzle of condensed milk.

Simple desserts or complex desserts will taste good no matter what and are great endings for a fun day of grilling with your friends. Try these tips and see if you like them, and see if your friends do too! Happy grilling!
