It is a hot summer day and you have NO CLUE what you're having for lunch! Something heavy will make you pretty sick, while just an orange or apple may not be enough. Below, you will find a list of five summertime lunches that are healthy and a medium fare!
1. Caprese Salad
Thinly sliced fresh mozzarella, sliced tomatoes, and balsamic dressing drizzled on top makes for a filling, yet healthier lunch. This lunch is not too heavy, and it is served chilled! (My personal favorite!)
2. Strawberry Balsamic Spinach Salad
The name of this option is pretty self-explanatory! For this one, you only need some nice, fresh spinach leaves, fresh sliced strawberries, and a little bit of balsamic vinaigrette. Portion it out, appropriately, and mix the ingredients together.
3. Turkey Lettuce Wrap
Take some time to go to your local grocery store and purchase low sodium deli turkey (Hillshire Farm is my favorite) for this option! Lettuce off of a head of lettuce is used in place of a tortilla wrap, while the turkey, tomato, and any other toppings of your choice are included inside. This is a nice on-the-go snack for warm, sunny days!
4. Bagel Sandwich and Fruit Salad
This lunch option is quick and easy! You'll need a whole wheat bagel, low-sodium deli meat of your choice, and any toppings you would like to include. For this lunch, it is better to only eat a half of the bagel with your sandwich, in order to enjoy the fresh fruit salad (cut up fruit of your choice).
