Christmas cookies are one of my absolute favorite things about the holiday season. Not only do I love to bake, but I love to eat the cookies too! I mean who doesn’t?! However, this holiday season is a bit different for me when it comes to the food, as this is my first Christmas where I am completely gluten free. Sometimes it proves itself to be challenging, but after doing some research and baking tests, we’ve learned that there are certain gluten free flours that should be used for certain baked goods. Bob’s Red Mill is a wonderful brand full of a variety of different options to choose from and my favorite brand. And a little tip, their website has printable retail coupons!

Below is a list of some Christmas cookies that are relatively easy to make and will get your mouth watering for sure! And for most of these recipes you can substitute all-purpose flour for any gluten free flour too!

1. Peanut Butter Hershey Kiss Cookies

One of my favorites, peanut butter and chocolate together all in one bite, yum!

2. Sugar Cookies

Make them into cut-outs by using your favorite holiday cookie cutters! And maybe you even want to decorate them with your friends and family, make a small party out of it, drink some hot cocoa, play some Christmas music and just have fun!

3. White Macadamia Nut Cookies

So, I have never made these particular cookies homemade, but they have always been a favorite of mine! This recipe is easy to follow and definitely one recipe I’ll be trying this year.

4. Gingerbread Cookies

Decorate them to share with your friends or preserve them to use as Christmas tree ornaments!

5. Snickerdoodles

You can't go wrong with a Christmas classic, the snickerdoodle! Yum!

6. Chocolate Chip Nutella Cookies

Drooling just looking at these. I'll probably eat the whole plate.

7. Nut Tassies

While they aren't actually cookies, they are similar to mini pecan pies, bite-sized and delicious!

8. Red Velvet Chocolate Chip Cookies

A mixture of red velvet cake and chocolate chip cookies, yes please!

9. Chocolate Peppermint Sandwich Cookies

I've never made a sandwich cookie before, but they look yummy and like a lot of fun to make!

10. Chocolate Chip Cookies

The ultimate classic everyone needs on their Christmas cookie platter!

11. Hot Chocolate Cookie Cups

Cookie + hot chocolate, can you think of anything better?! Yum!

12. Oatmeal Raisin Cookies

This is my dad's favorite cookie, so it is always made in our house each year for the holidays. If you aren't a fan of the traditional oatmeal raisin cookie, try and spice it up a bit by adding a can of pumpkin! They're fantastic and give the whole cookie a new and exciting flavor!

13. Russian Teacakes

Double rolled in powdered sugar, these buttery cookies melt in your mouth and were made by my grandmother almost each year for Christmas.

14. Peppermint Swirl Cookies

What better way to spread Christmas cheer than with peppermint? And cookies, of course! Give these a try, you won't be disappointed!

15. Chocolate Crinkle Cookies

Soft and chewy chocolate cookies sprinkled with powdered sugar. As a lover of chocolate, this cookie is definitely calling my name!

16. Christmas Tree Cookies

Show off your creative side by decorating your own edible Christmas trees!

New year, new semester, not the same old thing. This semester will be a semester to redeem all the mistakes made in the previous five months.

1. I will wake up (sorta) on time for class.

Let's face it, last semester you woke up with enough time to brush your teeth and get to class and even then you were about 10 minutes late and rollin' in with some pretty unfortunate bed head. This semester we will set our alarms, wake up with time to get ready, and get to class on time!

And so it begins.

1. Walk in motivated and ready to rock

Camping out at the library is not for the faint of heart. You need to go in as a warrior. You usually have brought supplies (laptop, chargers, and textbooks) and sustenance (water, snacks, and blanket/sweatpants) since the battle will be for an undetermined length of time. Perhaps it is one assignment or perhaps it's four. You are motivated and prepared; you don’t doubt the assignment(s) will take time, but you know it couldn’t be that long.

December... it's full of finals, due dates, Mariah Carey, and the holidays. It's the worst time of the year, but the best because after finals, you get to not think about classes for a month and catch up on all the sleep you lost throughout the semester. But what's worse than finals week is the last week of classes, when all the due dates you've put off can no longer be put off anymore.
