A few sweet recipes to spice up your holiday season!

1. White Hot Chocolate

Ingredients:

4 cups milk

1 cup white chocolate chips

1 tsp vanilla extract

Place milk, white chocolate, and vanilla in medium saucepan

Whisk until chocolate is melted and the mixture is smooth.

2. Vanilla Mint Green Smoothie

Vanilla layer ingredients:

1 frozen banana

½ cup light coconut milk

1 tsp vanilla extract

1 Tbsps. chia seeds

Green mint layer:

½ frozen banana

1 ½ cups spinach

10-15 mint leaves

¼ cup coconut milk

Blend ingredients until smooth.

3. Winter Fruit Salad

Ingredients:

2 pomegranates

2 pears

2 persimmons

2 apples

4 kiwis

6 mandarins

Dressing Ingredients:

1 orange

½ lemon

¼ cup honey

½ tsp poppy seeds

Peel, slice or dice the fruits

Combine all the fruit together.

Pour dressing over fruit

Mix and toss fruit

4. Peppermint Oreo Bark

Ingredients:

10-ounce package Oreo Thins

2 ½ cups white chocolate melting wafers

1 cup chocolate melting wafers

¼ cup peppermint bits

Place white and chocolate wafers in separate bowls and melt.

Spread white chocolate on the back of cookies and lay flat on a foil-lined pan.

Spread rest of white chocolate over the top of the cookies. Drop the chocolate by spoonful over the top. Swirl. Sprinkle with peppermint bits. Let set

5. Peppermint Crunch Popcorn

Ingredients:

¾ cups unpopped popcorn

8 ounces white chocolate chips

¼ tsp peppermint extract

1 cup peppermint baking chips

¼ cup sprinkles

Pop popcorn

Melt candy

Stir extract into candy coating.

Place popcorn in large bowl.

Combine popcorn, candy coating, and peppermint chips. Sprinkle on sprinkles and stir.

Spread popcorn on waxed paper and let cool.

6. Mint Chocolate Chip Truffles

Ingredients:

4 ounces cream cheese

½ cup butter

2 cups powdered sugar

1 tsp peppermint extract

1 drop green food coloring

½ cup mini chocolate chips

12 ounces melting chocolate (dark or white)

Beat cream cheese and butter until creamy. Add sugar, peppermint extract and food coloring.

Fold in chocolate chips.

Drop onto lined baking sheet. Freeze for an hour.

Using a toothpick, dip the truffle into the melted chocolate.

Add mini morsels for garnish.

7. Raspberry White Hot Chocolate

Ingredients:

2 cups whole milk

½ cup white chocolate chips

2 tsp raspberry extract

3 drops pink food coloring

Whipped cream

Pink sprinkles

Add milk, white chocolate chips and raspberry extract to small saucepan.

Stir until chocolate is completely melted.

Add 3 drops of pink food coloring.

Garnish with whipped cream and sprinkles.

8. Christmas Crack

Ingredients:

4 ounces of saltine crackers

1 cup butter

1 cup brown sugar

2 cups dark chocolate chips

¾ cups chopped pecans

Preheat oven to 400 degrees.

Combine sugar and butter in a medium saucepan and bring to a boil. Let boil for 3 minutes. Pour over saltines so all the crackers are covered.

Bake for 5 to 6 minutes.

Spread melted chocolate on top and refrigerate for 2 hours.

9. Dark Chocolate Candy Cane Cookies

Ingredients:

2 cups flour

¼ cup cocoa powder

1 tsp baking soda

½ tsp sea salt

1 cup unsalted butter

½ cup granulated sugar

1 cup brown sugar

2 eggs

1 tsp peppermint extract

1 bag white chocolate

Crushed candy canes

Whisk flour, cocoa powders, baking soda and salt.

In another bowl, beat butter and sugars until light and fluffy. Add egg and peppermint extract. Add flour mixture.

Chill dough for 1 hour.

Preheat oven to 350 degrees.

Bake for 10 minutes.

Cool for 5 minutes and dip in melted white chocolate and sprinkle with crushed candy canes.

10. Gingerbread Cheesecake Dip

Ingredients:

1 package cream cheese

¼ cup brown sugar

¼ cup powdered sugar

3 Tbsps. molasses

1 tsp ground ginger

1 tsp ground cinnamon

4 ounces of Cool Whip

Graham crackers

Beat cream cheese until smooth.

Pour in sugars and molasses and beat until smooth.

Add ginger, cinnamon and nutmeg

Transfer to serving bowl and serve with graham crackers

11. Red Velvet Blossoms

Cake Ingredients:

1 box Red Velvet cake mix

1 package instant chocolate pudding

¾ cup of oil

4 eggs

Glaze Ingredients:

8 ounces of cream cheese

3 Tbsps. of oil

1/3 cup of milk

3 Tbsps. of water

1 tsp of vanilla

4 cups of powdered sugar

Preheat oven to 350 degrees.

Combine cake mix, pudding mix, oil, and eggs. Mix until smooth. Pour batter into muffin pans.

Bake for 12 minutes. Remove from oven and turn over pan onto a towel.

To make the glaze, microwave cream cheese for 30 seconds. Add remaining ingredients and mix.

Dunk cakes into the glaze, let cool for 1 hour. Refrigerate until ready to serve.

Let's face it, last semester you woke up with enough time to brush your teeth and get to class and even then you were about 10 minutes late and rollin' in with some pretty unfortunate bed head. This semester we will set our alarms, wake up with time to get ready, and get to class on time!
