We’re in the fourth week of Fall, and the leaves are finally starting to change color. But while that first sip of the first pumpkin spice latte of the season might have been worth the 20 minute wait at Starbucks, it’s just not the same right now. The artificial pumpkin spice treats are getting old, and the weather’s in that awkward stage where it’s freezing in the morning, but still warm in the afternoon. However, that doesn't mean you have to go back to your boring non-Fall-flavored routine. Pumpkin on its own is delicious, and its full of low-calorie fiber, potassium, and Vitamin C. So here are 10 delicious healthy pumpkin recipes you can enjoy before the pumpkin spice turns to gingerbread and hot cocoa.

1. Pumpkin Spice Latte (by Chocolate Covered Katie)

A pumpkin spice latte is the symbol of Fall. But Starbucks is expensive, and many of their drinks are full of sugar and syrup. So get creative, and try making your own, just how you like it! It’ll really highlight the pumpkin flavor, and you'll save a few bucks.

2. Pumpkin Oatmeal

Have you ever mixed a scoop of pumpkin and some cinnamon into a bowl of hot oatmeal? If not, try it RIGHT NOW.

3. Pumpkin Pie Overnight Oats (by Oh She Glows)

If you’re more of an overnight oats kind of person, this one's for you. It's basically pumpkin pie for breakfast.

Tip: For a more natural sweetness, substitute the sugar for a (very ripe) mashed banana and add cinnamon to the dough as well. Also, flattening the cookies before baking makes them a bit more firm.

This is one of the easiest dessert recipes, and it's full of protein. All you do is blend pumpkin, silken tofu, a little milk (if needed), maple syrup, and pumpkin pie spice; then stick it in the refrigerator. Don't be put off by tofu in a dessert, because this pudding tastes like pumpkin pie. Tofu is great in smoothies too, and it's a great way to get a creamy texture without having to use heavy cream.

6. Pumpkin Seeds

After carving your pumpkin, don’t let seeds go to waste! Just toss ‘em with some olive oil, season, stick 'em in the oven at 300 degrees for 50 minutes, and voila! You have a crunchy and delicious snack.
