Summer is here, which means that it is the season for fresh fruit and vegetables. There is nothing better than using these fresh ingredients to make tasty recipes during the summer. However, a lot of people don't have the time or don't feel like making long and complicated recipes. Salads are a perfect way to use those fresh fruits and vegetables! Salads are an amazing summer food; they are light, fresh and so easy to make! Here are 10 delicious salad recipes to enjoy over the summer:


1. Arugula Salad with Parmesan, Lemon, and Olive Oil

This week I made the arugula salad with Parmesan, lemon and olive oil. The recipe was extremely easy to make and only requires five ingredients. Most of the ingredients are things you already have in your kitchen, so this recipe is perfect for when you want a salad, but do not want to go to the store to buy ingredients. The salad came out amazing! It was delicious and had just the right amount of dressings on it. The salad is also great because you could add other things, like chicken, to it and make it your own! (And you do not have to freshly squeeze the lemon juice; bottled lemon juice works too!)


Ingredients: Two handfuls of fresh baby arugula, two tablespoons of freshly-grated Parmesan, two teaspoons of olive oil, one teaspoon of freshly-cracked black pepper, two teaspoons of freshly-squeezed lemon juice.

Directions: Place the arugula in a large mixing bowl. Add the Parmesan, olive oil, black pepper, and lemon juice. Toss the salad until all the ingredients are combined. Garnish with extra shaved Parmesan if desired.

"The Stranger" by Albert Campus touches upon many heavy elements... but not in the way you expect. Although it touches upon the aspects of death and love, it also deals with a hidden philosophy similar to that of nihilism.
