Quick & Easy Recipes

 

It is time to prepare for your formal, and you don't know what to do for dinner! All the restaurants are booked, so what should you do? Cook for your date! It will impress them, and you will end up saving money! Here are a few quick and easy recipes from readyseteat.com that you can prepare for you and your date.

Guilt-free Spaghetti Carbonara

Ingredients: 8 ounce dry spaghetti, 1 cup frozen green peas, 1/2 cup Egg Beaters Original, 1/2 cup half-and-half, 1/4 cup grated Parmesan cheese, 1/4 teaspoon ground black pepper, 1/3 cup sliced turkey pepperoni, cut in quarters

 

Directions: 

1. Cook spaghetti according to the package, add the peas to the spaghetti the last 2 minutes of cook time. 

2. Stir together Egg Beaters, half-and-half, cheese and pepper in microwave-safe measuring bowl. Microwave on HIGH for 30 seconds. Stir until smooth. 

3. Drain spaghetti and peas, return to pan, add turkey pepperoni. Gradually add Egg Beaters mixture while tossing to cover the spaghetti. Enjoy!

This recipe is easy and very inexpensive, and it only takes about 25 minutes to prepare. This serving size feeds four people.

 

Chicken and Bean Quesadillas 

Ingredients: 1 can pinto beans drained and rinsed, 1 can Ro*Tel drained, 1 tablespoon Pure Wesson Canola Oil, 1 pound boneless skinless chicken breasts cut into strips, 1-1/2 cups shredded cheese, 6 flour tortillas, PAM Original No-stick Cooking Spray, 2/3 cup reduced fat sour cream

Directions: 

1. Stir together beans and drained tomatoes in bowl, set aside. Heat oil in 12-inch skillet over medium-high heat. Add chicken, cook 6-8 minutes, stirring occasionally. Remove chicken from skillet and wipe out skillet with paper towels. 

2. Place about 1/4 cup chicken, 3 tablespoons bean mixture and 1/4 cup cheese over half of each tortilla. Fold each tortilla in half to cover filling; spray outside with cooking spray. 

3. Place 2 quesadillas side by side in the same skillet. Cook over medium heat 5 minutes or until lightly brown and cheese melts, turning once. Repeat with remaining ingredients. Cut each quesadilla into wedges and serve with sour cream and pico de gallo.

This super easy Mexican entree is great for parties! This recipe takes about 30 minutes to prepare and cook, and it makes six servings. 

Lastly is dessert, my favorite dish of course. 

One of the best home-made dessert dishes is a very simple one. All you need is some vanilla ice cream, fresh cut fruit and granola that comes in a bag. Take the fresh cut fruit and granola, and spread it over a cookie sheet and set the oven to 350 degrees. Put the fruit and granola in the oven for five minutes. Cook it just enough so where there is a bit of crunch in the ice cream. Or if you want a crispier mix, bake it for 10 minutes. Serve over a scoop or two of ice cream, and you have a great dessert!
