'Tis the Season for Overeating!

It’s that time of year again. Fall brings in the best of the holidays, and with it comes the overeating. With Halloween, Thanksgiving, and everything else coming up, we domestic folk head to the kitchen to test out some new concoctions using the classic fall ingredients. The classic choices are usually involve pumpkin, and who doesn’t love a great pumpkin recipe? But the calories can take a toll. I can’t take credit for this recipe, but I can share it with you all. It’s the perfect way to impress any group, and it’s as easy and healthy as can be.

For these pumpkin spice muffins, you only need TWO ingredients.

1 (15 ounce) can pumpkin filling, found in the canned fruit isle

1 box of spice cake mix (try the 18 ounce Duncan Hines Moist Deluxe Spice Cake Mix)

All you do is mix together the cake mix and can of pumpkin. The texture will probably be too thick. In that case, just add about 3/4 cup of water.

Divide your batter into sprayed or lined muffin tins. Bake at 350 for 18-22 minutes or until cooked all the way through. A warning for the cooking time- depending on the size of your muffins, baking time could be longer. Be sure to keep a close eye on the first batch so they aren't undercooked. Be sure to check on them early for the first batch so you don’t overcook them!

That’s all it takes to make delicious, healthy muffins for the holidays. Share this with your friends and be prepared to spend more time in the kitchen. These will be on high demand!
